I broke my toe a couple weeks ago.
You guys, I’m getting older. So much older, that I need to realize I can’t just hop up from the table and try to recreate the Kid n’ Play kick step from the 90’s.
Sadly, this happened a few weeks ago on a Saturday night. I had cooked a whole bunch of food and a friend of ours ended up coming over for dinner at the last minute.
After dinner (and several bottles of champagne – don’t judge!) – we were down a youtube wormhole (again, don’t judge!) reliving our youth with 90’s hip hop classics and we thought it would be fun to have our own ‘secret dance’, à la Kid n’ Play.
Yadda yadda, that ‘secret dance’ turned into a broken toe.
Back to the subject of this post, I actually made some homemade peanut sauce that night, from a recipe found here. It’s amazing to me how something so easy to make can uplift a meal and turn it into something so much better.
Making this is as easy as combining some Asian condiments with garlic and ginger. It’s great slathered on some grilled or roasted chicken, stirred into a bowl of noodles, with shrimp, et al.
This recipe is also flexible enough to make gluten-free, vegetarian and even vegan versions.
And the way it transforms an otherwise plain dish – it’s almost magical.
Maybe not magical enough to guard against broken toes – but it’ll sure make things taste better while you’re healing up.
Enjoy.
Ingredients
- 1 inch fresh ginger, peeled
- 1 clove garlic
- 1 tablespoon honey
- 1 tsp Sriracha sauce
- 1⁄2 cup smooth peanut butter
- 1⁄4 cup soy sauce (or gluten-free tamari)
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
Directions
In a small food processor or blender, combine all of the ingredients and purée until coarsely combined. Add about a 1/4 cup warm water and purée until smooth. Add water as necessary, until the peanut sauce is more runny and similar to the consistency of ranch dressing.
